1 cup Crisco
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
2 cups sifted flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
3 cups quick oats
1 cup coconut
1/2 cup chopped walnuts
Cream together Crisco and sugars till light and fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla. Sift flour, baking powder, baking soda and salt. Gradually stir into creamed mixture. Stir in oats, coconut and walnuts. Drop by teaspoonfuls 2 inches apart on greased cookie sheet. Flatten with floured fork. Bake 350° for 8-10 minutes or until golden brown. Makes about 8 dozen.
