PUMPKIN BREAD PUDDING

BLEND:

1 cup packed brown sugar

3 cups milk

1 teaspoon vanilla

1/2 teaspoon nutmeg

3 eggs

1-16 ounce can of pumpkin

STIR IN:

6 cups, 8 slices cubed, soft bread cubes

1/2 raisins or currants

1/2 cup chopped pecans

LET SIT 10 MINUTES:

Spoon into 9" x 3" buttered springform pan.

Bake 60-70 minutes or until inserted knife comes out clean.

Let stand 10 minutes, and then remove pan sides.

Serve warm or chilled with whipped cream and sprinkled nutmeg.
